[娘惹风味鲜鱿] Spicy Calamari

材料:
苏东 一条(250g)
洋葱 半颗(切块)
辣椒糊 一汤匙
大辣椒 半条
葱段 一棵
酸甘 一粒
蒜蓉 一汤匙
姜片 三片

调味料:
酱油 半汤匙
糖 少许
盐 少许

做法:
1. 苏东切花,汆烫10秒,沥干备用
2. 爆香姜片和蒜蓉
3. 加入辣椒糊,炒出红油
4. 加入大辣椒和洋葱炒一炒
5. 加入苏东和调味料快炒1分钟
6. 撒入葱段,盛上碟,挤入酸甘汁即可享用


Ingredients: 

1 squid (about 250g)
1/2 onion ( cut into chunk)
1 tbsp Chili paste
1/2 red chili
1 chopped spring onion
1 green lime
1 tbsp minced garlic
3 slices of ginger


Seasoning:
1/2 tbsp light soya sauce
Sugar to taste
Salt to taste

Method:
1. Cut the squid in half lengthwise, using a knife, lightly score the inside body in crisscross pattern. Cut the squid into 1-1/2 inch square, and tentacles into 1-inch pieces. Blanch the squid for 10 seconds, drain well.

2. Stir-fry sliced ginger and minced garlic till aroma.

3. Add in Chili paste, stir-fry till the oil begins to separate.

4. Swirl in Chili, and onion chunk.

5. Follow by squid, stir-fry for one minutes, add in seasoning to taste.

6. Sprinkle some chopped spring onion, dish out and squeeze in lime juice and serve.
