[珠联璧合]—凤凰球 Deep Fried Phoenix Balls
古早味菜肴 : 珠联璧合
材料A
猪肉 500克 (剁成肉末)
盐 2茶匙
胡椒粉 1茶匙
鸡蛋白 2粒
木薯粉 3汤匙
鱼胶 300克 (马鲛鱼肉造)
红萝卜(剁幼)50克
马蹄(去皮拍碎)5粒
青葱切粒 4汤匙
麻油 1茶匙
洋葱剁碎 3汤匙
蒜头(剁幼碎)3瓣
材料B
咸蛋黃(预先蒸熟)8粒
玉米粉 100克 (沾外皮用)
做法
1)将材料A全部放进碗中拌至完全均匀。
2)将混合好的材料,分成每份约80克重,各别包入1粒咸蛋黃,封口 搓㘣,外皮均匀沾上玉米粉。
3)锅中烧热炸油,放入肉丸炸至呈金黄色,取出沥油,切块后就可上桌享用。
注意 : 搓圆肉球的时候必须确定要够结实,同时外皮粘粉也必须均匀,油要够热才下去炸,以免肉球散开不成形。
Deep Fried Phoenix Balls
Ingredients A:
500g Minced Pork
2 tsp Salt
1tsp Pepper
2 Egg whites
3tbsp Tapioca flour
300g Fish paste
50g Carrot, chopped
5 Water chestnuts, chopped
4tbsp Chopped spring onion
1tsp Sesame oil
3 tbsp Chopped onion
3 cloves Garlic,chopped
Ingredients B:
8 Salted eggs yolks, steamed
100g Corn flour(for coating)
Method:
1. Combine Ingredients A in a bowl and mix evently.
2. Devide the mixture into 80g portions, wrap each portion with a salted egg yolk, seal and shape into balls,coat with corn flour.
3. Heat oil for deep-frying,drop in balls and deep-fry until golden brown. Remove, drain oil and cut into pieces before serving
